North African couscous recipe that I inherited from my mother. The stew is packed with a lot of nutrients from an array of vegetable like cabbage, squashes, carrots, parsnips, green beans and more at the base. I was not sure of my protein of choice, so I chose 3 (Chicken, lamb and beef) for an explosion of flavor. The couscous itself is fluffy and mixed with diced carrots and raisins. You will love it!
